Depurple produces lavender-blue cauliflower florets with a tender texture and buttery-sweet, nutty flavor. Anthocyanins give the heads their distinctive color. The florets work well fresh, broiled, sautéed, roasted or in soup; a little vinegar or lemon juice before cooking helps retain the color.
