Georgia Crystal is a porcelain hardneck garlic with rich flavor and mild heat. Slow roasting brings buttery flavors. Fall-planted garlic is harvested the following late spring or early summer, about 240 days from planting; spring-planted garlic is harvested the same season, about 90 days from planting.
