Burgundy Amaranth is a bold Aztec crop with dramatic plumes followed by beige seeds in about 105 days. The seeds cook like rice or pop like popcorn and are high in protein and nutrients.
Very young leaves work for salads and steaming, and seed heads left standing draw birds.
