'Green Knight' is a Burpee-bred eggplant selected for meaty flesh that takes up less oil, with fewer bitter seeds. Fruits grow about 7 x 1½ inches with succulent white flesh and a mildly sweet taste.
Plants reach 34-36 inches and bear heavily for vegetarian, Cajun and Indian cooking. Flowers and fruit bring a distinct look to garden beds.
