Description
Borage is a 2-3 ft tall heirloom herb with blue and sometimes pink edible flowers. The blossoms carry a cucumber-like flavor for dips, salads and summer drinks, or can be candied, while leaves and stems cook like spinach or chard.
Sow in the herb garden or among vegetables where pollinators visit. Plants also work as a cover crop and tolerate dry spells once established.
