Matador is a spinach variety with dark green, smooth, oval-shaped leaves. Flavor stays sweet as a mature plant, and leaves also pick young for salad mixes or cook for dishes such as risotto.
Productive plants make smooth leaves that clean easily. Sowing for fall harvest gives especially good growth.
