Mizuna is a Japanese mustard green with tender, mildly spicy leaves that are milder than many other mustards. Baby greens can be harvested in as little as three weeks for salads, steaming or stir-fries. The seeds germinate in cold, wet spring conditions, and the plants tolerate heat longer than lettuce before bolting.
