Description
Harris Model Parsnip forms perfectly straight, pure-white roots with a distinctive slightly sweet flavor. The roots store well and can remain in the garden through winter under a thick mulch layer, then be dug after the ground thaws.
Sow ½ inch deep in loose, rubble-free soil from mid-spring, or begin about 2–3 weeks before the last frost. Keep the soil evenly moist through the 14–21 day germination period, thin seedlings to 2–3 inches apart, and harvest after a few frosts before new top growth begins.
