Description
Hopi Red Dye Amaranth produces burgundy flower heads that bring color to gardens and arrangements. Its young leaves can be eaten fresh or steamed, the seeds are edible as grain, and the flower bracts provide a natural red dye.
Sow on the soil surface and lightly cover, either indoors 6–8 weeks before the last frost or outdoors after the soil reaches 70°F. Harvest young leaves when plants reach 12 inches, and pinch plants back to encourage more leafy growth.
