Pai Tsai-Fun Jen is a very early, semi-spreading hybrid green. Its light green leaves can be harvested from 6–8 inches, while mature snow-white stems add a crisp texture to stir-fries.
Sow indoors 3–4 weeks before planting out or direct sow in spring once the soil reaches 55–60°F. Sow every 2–3 weeks for a continuous harvest, and keep the fertile, well-drained soil evenly moist. Prolonged spring temperatures below 50°F can cause bolting.
