Description
Persian Star hardneck garlic has a thin whitish wrapper and reddish-purple striated skin around 8–12 medium cloves per bulb. Brought to the United States from Uzbekistan in the late 1980s, it performs well in cool northern regions and as far south as North Texas. The cloves have a mild zest raw and a mellow flavour after cooking, especially when roasted.
Plant individual cloves 2–4 inches deep and 5–6 inches apart, with the pointed end up, 3–4 weeks before the ground freezes. Harvest when the lower 4–5 leaves dry, then cure the bulbs for 2–3 weeks in a warm, airy place out of direct light.
